vinification

Manual harvesting of the grapes which are de-stemmed, crushed and left to macerate for about 7 months in terracotta amphora.

During this period, every day, a series of manual pumping over are performed.

This operation serves to promote oxygenation and the passage of color and tannin. At the end of the period in which the must remained in contact with the skins, it is drawn off and pressed with a manual press.

The must thus obtained is placed in a stainless steel tank at a controlled temperature for about 1 week. The aging of the wine will continue in the Amphora for about 1 year and a half until bottling which usually takes place in summer. Then it will be left to refine in the bottle for at least 5 years, before being put on sale.

tasting notes

Ruby red color with purple hues. Scent hints of fruit such as plum and cherry and with delicate notes of vanilla and chocolate. Full, robust and dry reminiscent
of the scent.

Excellent with game dishes, with beef and with aged cheeses.
